I'm doing mine at House of Taste in Bangkok and will travel up there about once a month. They have legit classes and trips to local markets. Note: classes are 3.5 hours long. Stay away from agencies offering cooking classes you don't need to attend.

proof of relationship, i.e. birth certificate and parent's passport. Proof of current location, i.e. Laos entry, passport stamp. Though didn’t request it this time, they usually request custody paperwork as yes I am a fulltime single parent..Finally, please note, if you’re applying in Vientane, you pay for your application in-person in cash in Thai baht. It's 10k each.

For clarification, at what point did the airline require your Thailand departure ticket? This ticket is for the next time you leave Thailand in the future?
