I just left on good terms and both HRs worked together, went to immigration, lawyers and still I had to leave.

What happens if I try to leave Thailand by land without canceling my extension of stay and work permit?

Have your employer do it. My employer canceled my extension of stay with an exit date of May 3 without canceling my work permit. They will cancel my work permit on May 2.
