So I have just tried to cancel my extension of stay with a letter from my employer stating my employment was finished at my local immigration. They won't do it without cancelling work permit first. My employer doesn't have the paperwork ready to cancel the work permit yet. It ends Monday along with the extension of stay. Was leaving the country on Sunday. Am I likely to be stopped at a land border?

Have your employer do it. My employer canceled my extension of stay with an exit date of May 3 without canceling my work permit. They will cancel my work permit on May 2.
Make sure u cancel yr WP and get NOC from DOL , if u fail to do so and enter again in Thailand in future you hve to pay 20K. So cancel your extension and burn the paperwork bridge completely.
Normal procedure is FIRST cancel your WP at Ministry of Labor and take the papers from there to the Immigration Office where Extension of Stay is issued.
you're asking a question that can't be answered. You shouldn't have a problem leaving flying out BUT you might have a problem if you leave by land. There are reports of people not being let out of the country when tryin' to exit by land without having canceled their extension.
