You can probably get away with doing a border bounce at Mae Sai. Then you can extend that to get you to February/March.

As Long as you don’t have lots of back to back stamps they aren’t gonna even blink an eye.

its against terms and conditions of Thai exchanges to use crypto for “foreign transfers”.

money does come from overseas with TransferWise. In my Thai bank statement it states “international transfer” whenever I use transferwise.

get a rentry permit if you want to keep your 60D visa.

You dont need to make a new TM30, you can update the one you have yourself.

But usually immigration in BKK doesn't care if tourists have one or not as its expected that you will be travelling around Thailand and some guesthouses/hotels do not bother filing a TM30 for you.
