It is YOUR Work Permit and the Extension of Stay is in YOUR passport, so YOU are the person who has to cancel both, if you give to employer they do what they like to do. Sometimes cancel, sometimes not. And YOU will face the problems when appliying for new Work Permit and Extension of Stay.

You will have to cancel the extension of stay. Get your current employer to provide a letter of your work termination and your final date of employment. Take that to immigration to cancel your extension. The date on the letter will be the date you have to leave the country. If you go cancel it the same day as your work finishes, you have to leave that day. If you wanted to stay longer you could apply for another extension of stay (1900 baht) which will be denied but you will be given 7 days to leave.
Immigration does not give you days to leave. If you cancel your Extension of Stay, you can apply for a new Extension of Stay and if you do not meet any requirements they will give you a stamp in your passport: Application NOT approved and 7 days to leave the country.
