What are the current requirements and experiences regarding renewing a retirement visa in Thailand?

Ask your bank for a one year statement. Takes about one week. My immigration office also asked for a bank guarantee letter dated same day as you apply for the extension. Never asked to look at bank book as they have the one year bank letter.
