 you will get a 60 day visa stamp. You can travel to Vietnam but when you decide to return to Thailand then the 60 days will reset. If you need an extension then immigration can extend by 30 days

 that's the exactly correct answer. It's up to the immigration. Most of the time there will be no issues. As long as she hasn't done anything wrong

If you are coming Thailand then Travelling out and back in then shouldn't be a problem. Perhaps book a hotel in Cambodia and show that as evidence
