A canadian travel document without a passport very likey indicates a refugee. A DTV although technically a tourist visa allows much longer residency. I think these two concepts are in conflict.

But it also begs the question will he be/is he a genuine student? The rules are now being enforced such that people should be on the correct visa that pertains to their situation.

For Soft Power, no documents about your job are listed as necessary

No, soft power lists "Participants of activities such as Muay Thai courses, Thai cooking classes, sport training, medical treatment, seminars, music festivals, etc. ". Not sure what the etc encompasses but needs to be of cultural, significance and approved by the government, so there would be not a lot outside what is listed.

Check the information from your consulate. The Sydney one explicitly says "Applicants for a Thai e-Visa at the Royal Thai Consulate-General in Sydney must be in Australia for the entire application process." And most if not all consulates would be the same

If you feel like a holiday, may be a good idea. But it is possible the documents would need to be in English or translated, if not already

Which flavour of DTV are you thinking of applying? Workcation or soft power? It sounds like on the surface of it, neither. If you really want to apply for the DTV, it sounds like soft power is the way to go. and your partner (needs to be legally married and present a marriage certicate) and son can apply for a dependents visa based on this.
