you can have the bank account in your name only then you can add your wife as a signatory allowing her to take the money upon your demise.

Lots of banks try that, just politely tell them you have private life insurance from your own country and it would be compromised if you contracted for another policy. It gives them an out when the manager asks them if they flogged a policy.

I have extended 7 years in a row in Hua Hin.

Go to the bank in the morning, have some food while waiting, and go to Immigration straight after.

Yes. They can piggy back as a dependent until they are 50, then they need their own.
