7 days Quarantine only if you come from a high risk country and of course you have to stay in room all the time.

What happens if my visa expires during a public holiday in Thailand and I can't renew until the next business day?

It's up to the officer. 500,- thb overstay per day or maybe no fine because of holiday. Your extension should not be effected.

 The guys from the morbike shops will do it and they know exactly, what's required.

Make the deal at some Motorbike Shop. They have all documents there and will charge you for the service only a few bucks. Only thing you have to care yourself about, it's the prove of residence from Immigration. That's a 10 minutes-job only.
