Do you receive a confirming email immediately after applying for the Digital Arrival Card, and is it required to show on arrival in Thailand?

it's an arrival card. There's nothing to question. By switching to digital format immigration no longer needs to enter the data. When you present your passport the computer brings up the information. The officer can see that you have submitted.

Can I extend my Thai e-Visa for 30 days without leaving the country?

you can only apply once. After exiting Thailand (after 1 extension) by crossing a border the process resets. You cannot make application for multiple extensions
