Valid until means you can enter the country before that date after which your 60 days start.

If you enter on July 28 you'll get 60 days.

If they're not asking for password (which they will) thenl definitely they have some sort of back channel access to spy on everyone (which they do).

Otherwise they'll only be able to look at your public posts on social media and not private posts. On Facebook you can make all public stuff private in settings with 1 click.
