We didn’t need additional Thai insurance when we did our STV renewal, but that was in June in Chiang Mai 🤷🏻‍♀️

Yes I think this is generally the intention behind the STV - that you stay in once place. To even get ours in the first place we had to show we had booked a place to stay for the entire duration (including our possible extension). I think this is standard, but indeed doesn't allow for much flexibility if that is what you were looking for.
