How can we apply for Guardian visas in Thailand while resetting our tourist visas?

You have no chance of staying long term on tourist stamps. That's not what they are for. You seem to have a substantial amount of money. Why don't you just travel back and get the birth certificates. Or just have them sent by registered post. Just apply for the correct visa with the applicable documents. It's not too difficult if you just follow the rules.
