extend your current Tourist visa with 30 days, then apply before the total of your 90 days expire (and before March 26) for 60 COVID extension days. Easypiesy since you are a new tourist, no problem

You can only obtain a 60 day Tourist visa outside Thailand.

You can extend your Exemption stamp with an extra 30 days in Thailand at an IO.

Mind you it's not a visa, it's an extension of stay.

VOA for UK is very unlikely, VOA is just for certain countries, not UK.

Just get yourself a 60 day tourist visa or arrive on a 30 day Exemptiom. These can be extended with 30 and if it's not march 25 yet with 60Covid

They dont ness ask though they check it in the system. If not landlord faces a big fine since its their responsibility, not yours

Well, why want to extend so far in advance, you have till your stamp expires and/or Match 25 in case you always been a tourist

If she booked 2 separate tickets hence South Africa-BKK and needs to check in for BKK-Cambodia then she needs to go through Immigration and do all requirements for entering Thailand.

Best firstly to check with booking agent or airline, plus Cambodian requirements for entering on sealed air-routes.

If she needs to go through Immigration to pick up her luggage I could imagine its meaning Thai Pass, Test & Go scheme (which is 6 days stay in Thailand but maybe 1 day Quarantaine hotel in this case??), PCRs tests, insurance etc

She most likely needs a sealed route to fly to Cambodia, might be cheaper and less time consuming to cancel and book another flight.

You can get a new 60 day extension since you still have a tourist status!! So no worries

If it's your 1st C-extension it's very good they turned you away since you be stamped from day of application. You would have lost 30 of the 60 days!
