What are the current rules regarding extensions for tourist visas in Thailand, especially after the COVID-19 amnesty?

I've got a 60 day tourist visa (E-visa, applied for in advance – arrived Mid-Oct) and just got it renewed with the 30 day regular extension. Original expiry date Mid Dec, but extended until Jan 31 now (due to what you write about further up). I plan to apply for the 60 day Covid Extension (my first) later on in January.
