I read that as you only need to give an itinerary, hotel names and duration of stays. I don’t think you actually need to make bookings. Just my view.

Without knowing exactly what they have asked for, you could try just giving the names of hotels in plausible places. The only time I have ever had to show an actual booking was during the height of Covid, otherwise a hotel name and address was sufficient.
