Vietnam has increased its' approval criteria. Some embassies do ask for business registration and employment info for SP applicants.

Yeah they are not currently and I never been asked but i just have in case. Better to be safe than sorry

It is not a problem to change employers. If you extend via immigration then you provide the new info. On arrival you could be asked for evidence of employment, extremely rare. Best to have employment docs to hand on arrival just in case.
