Without wanting to cause confusion, it depends on your transfer at Amsterdam. If you don't actually enter through their immigration, then it would be France. If you do go through immigration, then of course it would be Netherlands as your last port of embarkation before arriving in Thailand.
We completed our TDAC both ways, neither of us were picked up on it when entering Thai immigration. They probably don't really care as they've got the most important information from you via your flight number.

Jon, possibly you didn't complete the TDAC during your first visit as it only began a couple off months ago.
So, go onto the Thai immigration website and complete your Thailand Digital Arrivals Card. It should be completed only within 3 days prior to your entry to the country.
Ensure you make no payment for this electronic card as some are still paying 50 usd etc - it's free kf charge.
On entry to Thailand, they'll scan your passport and all your card details will appear on their database, some tourists still send a copy of the card onto their phone as proof it's even done, be we don't bother.
It's still 60 day visa exempt stamp for must countries, but you need to check for yourself.
