My girlfriend is here in udon Thani and she is 3 months pregnant. Am I right in thinking that I can apply for an o type visa to look after them both? If so, can I do my job here remotely?

I got mine pregnant and ran away but I came back because I found out that social security will pay for the kid till it's 18 . Now I'm hoping it's twins...
correct. You only need a work permit if you work inside Thailand for a Thai company. Remote work for an foreign company does not require any papers. Udon immigration is quite easy going, they will probably give you at least a month extension due to pregnancy and if you remain calm and friendly they will help with finding other options.
