Do hotels in Thailand keep your visa like in Vietnam?

No. It's actually illegal for any form of accommodation to keep your passport or visa in that case.

However, we experienced in Vietnam that the hostel kept our passport until we checked out.

I don't know if it's the same case but I renewed my passport at our embassy here and when I went to immigration they 'transfered' only those important old visas and the current.

They can be good as cash if you don't like the items they have in exchange for those stickers. Last time I collected those, I had like 300฿ worth so I shopped and paid with stickers. Haha
