We had the same situation, we decided that was better to get our baby a visa before any possible overstay. Is true that kids are not treated as adults but the overstay on passport will stay forever and you will be questioned if try to enter other countries later. Better be safe than sorry, get a visa under your husband.

maybe, but the possibility to extend is up to them, it might be rejected too. You can’t come into a country without a proper visa and say to immigration officer that you plan to stay over the time they entitle on a visa exemption. Then sure, you might be able to extend, but you don’t say it to the immigration officer that has the power to accept you in the country or not.
The red flag is when you told them you were staying 60 days. Next time just say you are staying within your visa exemption duration and eventually extend if you need to.
