Easiest is to get the 60 day visa exemption on entry then towards the end of that leave Thailand then re-enter for another 60 days.

 Yes, that’s my experience too. I even applied for a 30 day extension and they asked for my girlfriend’s address but not for a TM30.

Return to Vietnam? No I don’t see why you would.

Technically, you need a ticket out of Thailand within 60 days, if you’re using visa exemption. Your ticket to Vietnam meets this requirement ( if you have it before you enter Thailand).
