Have you tried World Nomads? They used to do one-way travel insurance; no need for a return ticket. Use them for cover while you travel then get health insurance in Thailand.

They still need to transfer the money to their account. Fees apply in that case but not as much.

Take a mixture of cash and card. Revolut or Wise are good but ATM fee is ฿250 per transaction.

Vietnam and Laos are both beautiful. Well worth visiting.

If you have a British passport then you can stay in Vietnam for 45 days, visa free. But, you will need a visa for Laos.
