So it's probably not possible then (unless we are able to leave the country first)?

Do you mean without having to leave the country? Or is this an additional requirement?

My under consideration stamp says to come back on April 19th which I just noticed is a Sunday! So, do I go back the Friday before, or on the 20th?

After entering on the 30 day visa exemption, I got the standard additional 30 days, and then applied and got a covid-19 extension with an under consideration stamp saying to come back to immigration on April 19th. If accepted, I should get a new stamp to May 4th. Do I still need to go???

I already said we were here as tourists and did the 30 day extension. However, this doesn't answer my question about if anyone knows if the Thai authorities might allow more than 1 covid-19 extension.
