 Well, in pre covid time you could if you decided to not use your visa and void it.

But my question here is more about entering with the existing visa, but not mentioning it on the COE.

How long is an International Driving Permit from the UK valid for in Thailand?

As a tourist, you're allowed to drive in a foreign country with an international license + your national license for no more than 90 days.

The international license is merely the standardized format of a translation, that's why it should be used together with your national license.
