Is it possible to stay on a Non O Spousal visa with only foreign income. What are all the docs needed in Thailand i.e proof of income and marital status. I have my own online business.

Given its illegal to work without a work permit they won't want to see your work related income. Many people ignore this and work online but I'd keep quiet about it.
Your disagreement doesn't change the law. You cannot work in Thailand without a work permit. Whether it's for a foreign company or not, you are working while you are inside of Thailand. Just keep your head down and don't bring attention to yourself and you'll likely be fine, but you are still technically breaking the law.

If you are already married to a Thai, then just borrow the bt400,000 for three months plus a week, or two. There is no requirement where the bt400,000 came from like there is for a retirement visa. Sure everyone will say it is only two months it has to be in your Thai bank account before you apply, not realizing that most immigration offices also like to see it in your account during the 30 day under consideration period after your application is accepted. Your wife's family would be the first place to ask, with you paying the appropriate interest for those few months. If the family can't do that then they will be seeing you in the future as an ATM, as they have no money. If they truly accept you as family, and have the savings then they should have no problem giving you the loan. If you explain about the 12 month deposit requirement method, they should understand

If you use the 400k in a thai bank account method to obtain a yearly thai spouse extension, your income amount is irrelevant.
in that case , you need evidence of international transfer of 40k a month for 12 months into your personal thai bank account prior to applying for the yearly extension. Your bank can provide this in statement form.
Regarding marital status evidence, you need marriage certificate and registration of marriage document. You get both same time when you get married in Thailand. And copies of both signed by you and wife.
