Apologies if this is obvious to many but better to check then fall fowl. If I enter visa exempt (From Australia), the 30 days starts on the date of the stamp in my passport on day of arrival and I have to leave on or before the 30th day? Booking flights and want it right. Thanks in advance.

ok, here's how that works IF you're flying out and have an overstay of UNDER 24 hours (READ THAT people) you do not get fined for overstay and you do not get a regular overstay stamp in your passport,
you just get a thai only stamp under your exit stamp that says "overstay under 24 hours fine waived"

Yea they day you land is day 1 you leave on day 30 you technically can leave day 31 if your flight is at 1 am etc as long as you pass through immigration before midnight
And one single day overstay normally doesn’t give you any problems, though it’s not recommended. Just left with one day overstay last week and no questions or money to pay for the first day.
And you don’t have to leave within 30 days. You can can get a one time extension of the visa exemption for another 30 days at the local immigration for 1900 thb, BUT you formally have to show proof of a ticket out of Thailand within the first 30 days which you don’t need to use. This can just be a cheap bus ticket. Then you can stay for 60 ore 59 days on visa exempt.
