TLDR : Answer Summary
Yes, as an Australian, you can enter Thailand with a 30-day visa exemption and extend your stay for an additional 30 days at an immigration office for a fee of 1900 baht.

no issue entering on a 30 day visa exempt entry as an Aussie or getting the 30 day extension on that at the immigration office for 1900baht after you're here

The current exchange rate AUD/THB would see you paying over the odds by applying for a 30 day extension IN Thailand as opposed to applying for a Visa IN Australia BEFORE you depart for Thailand.

which also solves the problem of having to show onward travel within the first 30 days.
