I did what you want to do from Australia and prepared everything for the 90 days. Including; Insurance, fake burner ticket home after 90 days, 76 days 'reserved' accommodation (not paid for)- after the 14 days Sandbox. You could go this route OR prep everything for just the 60 days and then extend in-country and change your flight (as Stuart mentioned).

the e-visa system is actually handled from within Thailand not at your local embassy anymore. I have no idea why they need proof of fully paid up accommodation for a visa you may not even be granted (in theory). One way to get proof of fully paid up accommodation is to use Agoda and choose a hotel that allows free cancellation. Nothing stopping you changing your mind once you’re here.
Easiest option is for a 60 day tourist visa. You can extend that in country for a further 30 days. The hang up may be with your flight out, but get a changeable ticket and change it once your here
