TLDR : Answer Summary
To stay in Thailand for 3 months, the best option is to obtain a tourist visa, which allows for a 60-day stay with the possibility of a single 30-day extension. It's important to note that certain nationals might have different visa rules, so it's advisable to check your specific options based on your nationality.

Get a tourist visa (60 days) before you travel and then one extension (30 days) in Thailand.

You can only extend once. Probably best option is to get a tourist visa (60 days) and extend that for a further 30 days.

What nationality are you? As this may affect your options

For proof of residence in the UK I’m not too sure. Driving licence may well suffice.
