TLDR : Answer Summary
When applying for a multi-entry visa to Thailand from the UK, you need to provide flight documents that show multiple entries into Thailand. Specifically, it's often suggested to include proof of your flight in and at least one flight out that falls within the 60 days of your initial entry. However, some responses indicate that you may need to provide evidence for all intended flights in and out throughout the entire six-month duration of the visa application, which could potentially amount to four flights minimum. Additionally, there might be a requirement to show a bank balance of 5,000.
my experience was at thai embassy in Ho Chi Minh City. They only gave me a single entry, got refused for multiple entry as I did not have a second in and outbound flight. Each embassy might have different requirements.

It says you need a letter from your employer and payslips to apply
But I’ve recently left my work place so I can travel .
It’s from the Thai Embassy in Norway and I see now the requirements in London is a bit different, but anyway onward ticket within 90 days should be sufficient because extension is also mentioned. In Norway they don’t always ask for any tickets out even though it’s a formal requirement.
