Me and my boyfriend are flying to Thailand on March 26. I want to apply for a visa for six months, but for that I need proof of a return flight, but we don't have that yet because we don't know when we will return to the Netherlands. Can I also book a ticket to Malaysia as proof or is that not enough?

TLDR : Answer Summary
To apply for a 6-month multiple-entry tourist visa for Thailand, you need to provide evidence of three flights: an entry ticket to Thailand, an exit ticket from Thailand within 60 days, and a subsequent ticket back to Thailand. Booking a flight to Malaysia can serve as valid proof for the exit requirement, as long as it demonstrates that you are leaving Thailand and intending to return.
For a 6 month stay you'd need a 6 month multi-entry Tourist Visa and to get that you'd need to show 3 flights. First from the Netherlands to Thailand. Second a flight out of Thailand within 60 days of entry. Third a later flight back to Thailand which is the proof you need a multi-entry Visa.
By 6 month visa, I'm going to assume you mean multiple-entry tourist visa.
The requirements for this visa are to show that you need to enter Thailand multiple times. That means a ticket into Thailand, a ticket out of Thailand within 60 days, and then another ticket into Thailand. Where you go should not matter, just that you meet the requirements.
If you only apply with a ticket into Thailand, and a ticket out of Thailand, then the embassy may issue you a single entry tourist visa since you only showed you need to enter Thailand once. If they do this, they will not refund the difference in price.
