I resign my job in the end of June and gave one month notice to my employer. So my last day of work will be on the 31st of July. My WP and visa-extension expire on the 30th of April. I have flight back to my home country on the 1st of August.
According to my employer HR (very young and inexperienced) I have to go to Labour department to cancel my WP on the 31st and later in the same day going to Immigration to cancel my visa and leave the country on the same day. As I said before I have flight on the 1st of August morning so according to that information I'll overstay in Thailand.
Also do I really need to do all that in my last day in Thailand? Can't I just let my WP with HR and they deal with it after I leave Thailand? What are my options?
I would really appreciate that someone could help me with is because unfortunately I can't really on HR because they never did it before and they are not secure about their info.

It's wrong. It does not have to be done on the last day of that contract and can be done before. I'm a recruitment consultant here and deal with these kinds of things all the time.
Maybe get them to make your "official" last day 7 days before you fly home (rather than the real date) and then buy the 7 day extension to keep you legal until then?
. That's what I thought but the HR lady said that she called to Immigration and they told her that I have to do it in the last day of contract and can't do before. I also found it weird.
It's actually your responsibility to do those things.
You go cancel your work permit, you take the receipt of cancellation to the thai immigration office, you cancel your current extension (if needed you BUY a 7 day get out of thailand stamp) and then you can fly out.
As a rule a single day overstay fine is not charged when you fly out but you'll get the overstay of less than 24 hours fine waived stamp in your passport.

I understand what you say by being my responsibility although is part of my contract the HR deal with the process because I live and work in a boarding school about 50km from the closest city. So I (and my colleagues) depend on them to deal with this situations and to travel to the closest offices (immigration and Labour).
So there is not a possibility of just leave the country and they cancel my WP later? Or cancel everything and buy the 7-day extension on the 27th of July for example?
