Yeah you're right. I wouldn't dare doing that. We know for a fact that immigration and MFA's digital systems are improving year after year. They likely know entry/exits of every fingerprint owner.

I love all this. I cannot get a visa for here because I am here already so I must leave here and go there so I can apply there to come back here!
Before (when it was a walk up consulate) they ask you to show you're legally allowed to be in Hong Kong. People use to have to copy that little card they gave as proof they could be IN hong kong to use the consulate there.
also for Embassy in Seoul - as short term visitor of South Korea you are allowed to apply via e-visa only for tourist visa. Any long term application incl DTV required alien registration card copy submission- means you should be legal resident there during whole process and for DTV they declare up to 4 weeks for approval…
the only thai consulate in S/E Asia that lets you apply online while you're not in the country is the thai consulate in Singapore.
They have a special online application portal,
You can be here in thailand, apply, upload your documents, wait for the visa to be approved and then you go there, turn in the documentation pay, get the visa stuck in and come back
So pick a thai consulate you want to go to for the DTV, read the requirements on their website, their processing time, if you need an appt to get in the gate, get your documentation together, GO there and apply for the visa, pay, wait the processing time, pick up your passport with the visa in it and come back
That's what people who are IN thailand are doing to get a DTV nearby
that means you go to hong kong with your documentation, access the eVisa website, upload the requirements, show the address where you are in hong kong, your proof of legally being allowed to be there, then WAIT there for the eVisa to be approved, then print it and then come back
Why not just pick a nearby thai consulate you can walk in and apply for the visa, go there, apply, pay and pick your passport back up when it's done?
