I have seen mixed information about visa renewals done on land vs by plane. Is there a limit to how many times my visa will be renewed traveling by land to Malaysia?

First of all, there's no such thing as a visa renewal. There's only visa extensions that you apply for at an immigration office.
You're either talking about
1) doing a border bounce and getting a new entry stamp because you already have a multiple entry visa and you get a certain number of days each time you enter Thailand.
2) doing a border bounce with no visa at all and getting a 30 day visa exempt stamp (not a visa at all)
There's no limit to #1 it just depends on when your visa expires.
For #2 you can only do this at a land border 2 times per calendar year. There's no official limit by air but you're not going to be able to do this long term to live in Thailand because you'll start getting pulled out of line and asked a lot of questions after a few times and then eventually you'll be denied entry for trying to live in Thailand without a long term visa.
I'm honestly still confused by your answer. A 30 day visa on arrival. If I leave the country by land and pop into Malaysia I come back with a new visa on arrival... Am I only able to do this twice a year?

Sounds like your arriving 30 days visa exempt just an arrival stamp in passport. This you get every time you leave and arrive but can be extended at an immigration office for another 30 days.
You can do 2 land entrees and get 30 day stamp exempt visa and no limit by air until an IO decides you need a proper visa to visit again.
careful . I got pulled up a few years ago by Immigration and was warned that entry would be denied if I did not get the proper visa. He said how many times you come? Then issued the warning.
I don't need to be careful if you read again I said I have OX visa now. Also ii did it for 6 years never got stopped lucky maybe but also as I said i had return flights booked. History on their computers shows me in and out every 2 weeks.

depends on the office you go to some allow the extension early some only allow the extension 7 days or less of the expiry of the 30 days. The 30 days gets added to the original expiry date not from day of application for extension
yes. But it's not visa on arrival which is only 15 days and is not available at land borders. It's visa exempt and you can only do it at a land border 2 times per year. Some Malaysian borders are known for requiring you to stay a night in Malaysia before returning as well
