, There is no way to go to passport control on arrival gates directly once you go through the departure passport control (being stamped out Thailand) for standard travelers without flying out.
Just curiosity, wouldn't enough on BKK (big airport) to get exit stamp, miss flight, go out from airport as entering again with new stamp?

In a CALENDAR YEAR you are ALLOWED to ENTER Thailand TWO times using land border crossing entries.
By air there's NO real rule of how many times one can enter Thailand Visa EXEMPT.
However, with your recent history of staying in Thailand for over a year. DO NOT FLY INTO THAILAND and use only an experienced border run service company in doing LAND BORDER BOUNCE entries. They know what you need to do and know if you will be stamped in again Visa Exempt.

I don't think there are any written rules but from my experience this year I've entrered 3 times in the past 5 months plus one extention and no questions asked on any occasion.
Now going to Sri Lanka as Phuket gone to pot 😂 literally!!!!
Back for another 45 day in March and was thinking of extending again or flying to Japan then re entering Thailand on another 30 day entry….

When will you get the Non O Visa as retiree and the One year extension of stay as retired ?
In December 2021 your plan was to do the transfer of 65,000 Thai baht monthly to obtain the Non O in 2022. Did you do that?

Whenever you seek to do a BORDER BOUNCE to get ADDED 45 days stamp be sure to use an experienced border run service company to take you to the Thai border, cross and re-enter the same day with a new Visa exempt stamp.
Entering visa exempt (30 days, 45 until March 31), is allowed twice per year via land and in theory unlimited via air, though after a few times I would expect to be asked why you have not obtained a visa.
I've been here the last 5 months, and 9 of the last 12. Last time I flew in was the second time I was told to get a proper visa. But this last time he told me I won't be let in without one and typed something on his computer. Not sure if it was a note attached to my passport number or what. But there have been many people saying they have had the same experience as me, so it feels that the immigration officers are getting ready to tighten the strings. I'll be buying an elite visa, just to avoid any hassles and issues, in August. But until then I'm going to get the online 60 day visas and 30 day extension
