I remember last year they still ask for account statements and onward travel tickets- as of this month I saw no request for those on the Germany Thai embassy website.

Yes in Norway too, but this is a bit embassy dependent and it’s normally required to prove minimum two inbound and two outbound tickets for a METV.

They removed the financial evidence from the single entry tourist visa, but I'm not sure about the METV. But both SETV and METV still require proof of flight to Thailand and most likely proof of onward travel as well.
When you're in the e-visa website and you select multiple entry tourist visa, it specifically says you must justify your need for the visa. That means you need to supply them with a ticket into Thailand, a ticket out of Thailand within 60 days, and then another ticket back into Thailand. That is the justification for needing "multiple" entries.
