TLDR : Answer Summary
When entering Thailand on a METV (Multiple Entry Tourist Visa), proof of onward travel may be requested by the immigration officer, but it is not always strictly enforced. While it's advisable to have documentation like a return flight ticket, especially if you're on a back-to-back visa or visa-exempt entry, many travelers report that it is not commonly demanded. Airlines might also ask for a return ticket at check-in if you do not hold a visa, but having a METV generally alleviates this concern.

When checking in for my flight, I have been told that I need to show a return ticket if I do not have a visa. Since you have a visa, I don’t think there’s a problem.

I'm planning on getting a 2 month tourist visa and extending 30 days when I'm there. I'm in Australia. Will it be ok to buy a 1 way air ticket to Thailand as I'm not sure if I will extend or not

With one way ticket that is

Ronald I am thinking same question. I have been told by people that a one way ticket should be okay. But I am not sure. Either way, can risk it and then stay one month and increase by 30 days at immigration or leave country and then start applying for SETV. But I will apply for METV with one way ticket from Australia. But hopefully someone can provide more details that the METV will be approved

The airline you fly out with sometimes ask but with a setv or metv you don't need proof of onward flights.

On entering Thailand the Immigration officer can ask for show proof of funds, 20.000 Thb Cash or equivalent, proof of accommodation and proof of onward travel. It can be asked but with over 35 miljoen visitors it is not like every person has to show. Normally only asked when entering Thailand on back to back visa's or visa exempt entries.
