I have a quick visa question. I have a single entry visa from Vientiene embassy and it expires Jan 21. Is this extendable for an additional month from inside Thailand? I am looking at plane tickets for future visa trip and am not sure to buy tickets in Jan or Feb. Thank you!

You can extend a tourist visa within Thailand one time at immigrations. You'll get 30 more days for sure.
