You should go before the 90 Days is up anyways. No reason to wait for the 90th day.

Can a British and Dutch passport holder extend a 30-day visa in Thailand for a trip planned to Samui and Phangan?

You can apply for an extension at local immigration office. Apply a few days before your 30 day expires just incase there is any problem. You can also go out of Thailand and come back in again to get another 30 days.
