I booked an airbnb for the first month of my trip and sent that and it was accepted but that might have been an oversight as it seems you may need all 60 days of your first entry booked somewhere, personally I had one month booked and a flight out after 60 days so technically had a month unaccounted for, you only need to prove the first 60 day trip to get accepted though
For mine (just arrived yesterday on a 6 month multiple entry, for my "reason for multiple entry" all I said was I want to see all of Thailand so I will spend 2 months in Chiang Mai, fly to signapore for the weekend, then 2 months near Bangkok and 2 months on an island. Seems that was good enough as they didn't ask any more questions and I was apptoved
Right now because covid still exists, almost every airline will let you cancel or change your flight for cheap or free, I booked a flight for my visa then canceled it and booked with a whole new airline once my visa was approved, only took about a week to get my refund (although most airlines say up to 45 days but if you paid credit it's usually pretty quick
