Hi! I am currently in Thailand on a 30 Day visa exemption which expires on the 21st. I wish to extend for another 30 days. However this is a Sunday, and so my question is, if I go on for example the 17th, will my extra 30 days start from the 17th, or from the 21st? Thank you!

If you apply for a 30-day extension before your current 30-day visa exemption expires, the additional 30 days will be added to your current expiration date, not the day you apply. Therefore, in your case, if you apply on the 17th, your new expiration date will be the 21st plus 30 days.
People always seem to wait until the last second to apply for a 30 day extension on tourist visas and 30 day visa exempt entry stamps.
Believe me there is NO reason to do that. They ADD the new extension to your current expiration date so you don't lose any days by going early.
Also IF your current stamp expires on a day the immigration office is closed (weekends/holidays) and you go the very next day they're open you can get your extension like normal.
Keep in mind you will get an overstay stamp in your passport, but you will not be fined the 500baht overstay fine. It will say fine waived because of holiday.
I think many people are misunderstanding that you are not overstaying if you go to IO next weekday after your extension expired because you are not fined. Just don’t have to pay the fine doesn’t mean you are not overstaying.. you are and you still get the stamp.
They would add - top up - 30 days. But you just need to check you got additional 30days when you receive your passport. Don't wait until the last minute, anything would gonna come up.
