TLDR : Answer Summary
The consensus among commenters is that a 1-day overstay in Cambodia is unlikely to cause any problems at Thai immigration. Most believe that Thai immigration officers will not be concerned about minor overstays from another country, particularly one day.
Actually yes, Thai immigration will care about overstay and other immigration issues from other countries. That's why they want to see copies of all used passport pages when applying for a visa.
Thai immigration couldn't give a hoot about overstays from other countries, though it doesn't help your case, just that it generally has little to no bearing on being found admissible or not, especially if you don't have an overstay history in Thailand, which is what they care about.
Malaysia and Singapore might care. Australia and the USA will too, but Thailand? Absolutely not. They only care about Thailand. So if you've overstayed in Thailand before, that could be a problem, but overstaying in Cambodia, is a Cambodian immigration matter.
