Sorry to be a pain. Just one more clarifying question. 

My initial Non Immigrant O-A visa issued in Australia is valid until 3 Aug 2022 and the entry stamp from immigration says until 26 Aug 2022.

Which date do I need to leave and come back in by to get the additional 12 months?

If you leave, you will need to re enter before 3rd August 2022, however I do understand you will need the required insurance for another year also, meaning they will stamp you in until the end day of your accompanying insurance cover....

we arrived nov 2019 and renew Nov 2020, nov 2021 … we couldn’t fly out cause of Covid. We didn’t know that we should fly out 😅 we hope to fly out before nov 2022 and into Thailand after the OA visa date so we arrived on STV to apply for O visa (retirement) so that we do not need to buy insurance

If you leave and return before August 3...you will be stamped in for ONE MORE YEAR.

Only need the OA insurance for one added year.

26 August is your permitted to stay. The 3 August is the last day you could enter the country and be stamped in for another year.
