What if I am one day over stay and try a land border run at Kanchanaburi into Myanmar? Will I get a problem coming back in to Thailand?

IF they're gonna fly out, they'll be stamped out (which doesn't officially cancel the extension) and not have a problem flying back in.

From what I understand from the advice of all the schools, if you leave the country without a single or multiple re entry your extension of stay is automatically cancelled when you leave the country.

It is not orthodox, but many times I did a visa run to Lao or just flew out to Singapore without voiding my work B visa at immigration. Any opinion on this point.
No my work permit was cancelled by my school before I left. I finished my job at the school, that was all. Then I went to Lao to get a tourist visa back in 2019.
One year ago in 2019 I didn't get a new contract at school. My extension of visa time was up on May 30th. I went to Lao to get a 60 day tourist visa and got it.
I don't understand it. You can't do a visa run if you're already on an extension of stay. So why were you going to Laos or Singapore for a visa (or extension of stay??)
Thank you. My problem is to get to my school to get the letter that says they cancelled my work permit, then go to immigration at Chaengwattana, then get to the border before it closes is impossible. The visa run van leaves at 4:30 am the next morning. So I might be one day late. Unless I fly to Singapore that night and come back the next day. I did it before and they just gave me 30 days when I flew back in.
Try again: Go to the Ministry of Labor and cancel your work permit. Than visit Immigration and cancel your Extension of Stay. Yes, you have to wait till after 2 Jan as they are open again.
Your problem is to get to your school? No, you take your Work Permit make a visit a few days, maximum 2 weeks before you stop working the Ministry of Labor and cancel your work permit in advance. You take the documents and visit the Immigration Office to do to same with your Extension of Stay, in advance. Don't cancel on the last day you stand in front of the classroom but the next day and you have a complete day to travel and do the visa run. Or do as Benjamin says and get 7 days time.
One potential solution is to request an extension of stay when you cancel your work permit. You'll be denied, but will be given 7 days to leave Thailand. Once you receive that denied stamp, it'll give you enough time to plan a way to get a longer term visa.
You will be not the first and not the last who manage to forget the days and go into overstay. Go to the border, report that you have overstay of 1 day, pay the 500 Thb fine, get stamped out, and continue with the rest of the border crossing.
