My employer has just informed me that he cancelled my visa and work permit. Since my next employer dont have sufficient time for doing a non b, i am going to do a tourist visa in Vientine, Laos. My question is is there any document related to canceling my visa to be present at the Thai embassy in Vientine city ? Thanks

IF your stuff wasn't canceled correctly you aren't going to have a problem at a thai consulate in another country getting a new visa from them.

What you will have is a problem with immigrations here inside the country if it's not canceled correctly when you go to get a new extension

the cacellation must be done by Immigration , if done you can go to other places to apply. As other member already mentioned in Vientiane need booking 3-4weeks in advance. You can do also a quick border run for 30dasy and do a 30day extension.

Don't go to Vientiane. They changed their system. Use search function in group. Go elsewhere... Savannakhet, Vietnam, Hong Kong etc.
