If I’m entering Bangkok as a UK national at 11.05pm on the 29th January do I have 30 days from that point of entry - so I’d have to leave by 27th February before 11.05pm ?

If your flight is arriving at 11pm and you are trying to absolutely maximize your time, hang around the airport until after midnight then head to passport control. You'll get stamped in on the 30th and then will be able to stay until the 28th.
