Do you leave the day of the stamp or the day after? I just noticed the date stamped is 29 days after my immigration visit not 30...

it is easy to explain. Check the stamp. Your entry date or immigration encounter counts as number 1. Count from there. You need to pay attention if the month consists of 30 days or 31 days. . . . this example ist correct: You have to leave until midnight of May 2nd 2022

And you have to leave latest the last day. Unless you get an extension fir another 30 days

You must leave before midnight the day the stamp says. If you leave the next day you have overstayed.
