TLDR : Answer Summary
As a UK passport holder visiting Thailand for the first time for two weeks, you do not need a visa. You can enter Thailand on a visa exemption, which allows you to stay for 30 days without charge. If you wish to extend your stay beyond 30 days, you'll need to apply for an appropriate visa in advance.

For a two week stay you do not need a Visa.

Put a pen in your hand luggage, that way you can fill in the arrival/departure card before landing. Getting through passport control can sometimes take quite a long time so any amount of time you can save will be beneficial.

And taking photos of eachother doing it lol

After the 30 days expires can you go to immergration at chiang mai and get an extra 30 days or does it have to be a sixty day tourist visa?
you come in on 30 day's exempt you can extend one time for 30 more total 60 days. 59 the day you land is counted.

You can enter on visa exempt, which is not a visa on arrival, you as a UK citizen don't qualify for visa on arrival. 30 days free of charge, if you need longer you can obtain a visa beforehand. The visa exempt stamp is awarded when you queue to show your passport at immigration.
they are not visa exempt cards it's arrival and departure card. Do not lose your departure card staple it in your passport it's a trip to immigration for a new one.
